Spaghetti Squash Casserole

Looking to cut "gluteny" noodles out of your diet? Spaghetti squash makes a great substitute for spaghetti when cooked and pulled apart with a fork.

Spaghetti squash is rich in fibre and low in carbohydrates (pasta has 7 times the amount of carbs) and obviously the squash contains no gluten!

The broccoli in this casserole adds more nutritional density with its good serving of fibre to keep your gut health, plus its mega dose of Vitamin C will keep your immune system fighting strong during cold season. Lastly, the coconut cream is a great substitute for the typical heavy cream used in casseroles.

Get your squash on and make a pan of this filling and flavorful casserole. Its creamy, dairy-free sauce made with coconut cream is packed with garlicky goodness. I love making a big pan of this to have leftovers on hand.

I added shredded chicken breast to my casserole but this is totally optional. My secret way to easily make shredded chicken is to marinade it the night before, grill it the day of making this casserole, let it cool and then shred it in a small food processor. Delicious!
