Artichoke Pesto Pasta Salad

Everyone loves a good pasta salad, and this one will make them feel like you fussed but it's really super easy to make.

This tangy pasta salad is perfect for any artichoke or pesto lover. Making this salad ahead of time and chilling allows for the flavors to meld even more. But...you could also serve it as a hot pasta dish too!

You can use any pasta shape from fusilli, farfalle, orecchiette or seashell-shaped pasta shells.

My favorite brand to use right now is the GoGo Quinoa Pasta. I love the fusilli because they catch the pesto so perfectly!

This quinoa pasta is a great staple for any vegetarian or vegan pantry and an excellent option for people following a high protein diet, and even for athletes. Quinoa is a great source of complete protein.

People with Celiac Disease or gluten intolerance will benefit from this pasta, since it does not contain any gluten.

Artichokes are a superfood in every sense of the word.

The phytonutrients in artichokes provide potent antioxidant benefits. Antioxidants are exactly what our bodies need in order to combat free radicals. These antioxidants can also help to prevent your skin from ageing, becoming dry, and losing texture and appearance.

Consuming artichokes has been correlated with bringing cholesterol back to a healthy level, calming inflammation in the body, and improving blood flow.

They are also very high in fiber, which is crucial for keeping the digestive system running smoothly, relieving conditions like constipation. The fiber in artichokes can also help the body detox itself of waste, extra cholesterol, sugar and toxins and can act to facilitate liver functioning. It has the ability to keep blood sugar levels stable.

Artichokes also provide a good source of iron to help combat anemia. In fact, a one-cup serving provides about 10% of the average person's daily requirement for this important trace mineral.

Take advantage of artichoke's amazing benefits by simply adding this veggie to your diet with this great recipe.
