Papaya Avocado Salad

I love when clients send me photographs of their creations based on the foods that I have recommended for them. This one is a super refreshing papaya avocado breakfast salad. So good! I tried it myself!

Papayas contain the enzyme papain, which is good for digestion, and are an excellent source of vitamins C and E and beta-carotene, three powerful antioxidants. This delicious exotic fruit also helps to relieve bloating.

Avocados are a good source of monounsaturated fat, potassium and vitamin E, and pink grapefruit is an excellent source of vitamin C. This superfood contains lipase, which breaks down fat and gets food out of your digestive tract to prevent gas and bloating. It's high potassium content also helps you eliminate water.

If you want to make it a more heartier salad for lunch or dinner, you can add romaine lettuce, thinly sliced red onion and/or chopped green onions to it.

It's delicious with chicken or white fish, but is just as lovely on its own -- like summer on a plate.
