These are my favorite rice paper rolls filled with fresh thin-sliced vegetables and zingy tofu strips. The tofu strips are baked with a tamari sauce and sriracha mixture until crispy. They provide an amazing pop of flavour throughout the rolls. My recipe for a sweet and spicy peanut sauce to dip your rolls into is also provided. This is a great way to eat more fresh raw veggies!
The tofu strips can also be used in stir-fries, salads, wraps, as a simple side dish with steamed veggies, in vegan lunch bowls or just as a high-protein snack.
