Rummaging through my pantry, I found some beautiful lavender buds that I purchased from the Okanagan Lavender Herb Farm from our trip to Kelowna this last summer. When I opened the package, the smell reminded me of summer.
So, it gave me an idea to create this lovely and sophisticated peach-lavender ice cream. I usually make this recipe when the lavender is hung and dried from the garden, and the peaches are abundant. But, all this Alberta sunshine has me thinking about summer and patios and fresh peaches and ice cream! The cold air...not so much!
Peaches are an amazing source of beta carotene, which our bodies convert to vitamin A that is crucial for our eye and skin health. Peaches are also loaded with antioxidants and vitamin C to boost immunity.
But my favorite ingredient of all in this recipe is the lavender. It is by far one of my most loved herbs. It's beautiful and has so many incredible health benefits. The benefits of lavender include its ability to relieve stress, improve mood, promote restful sleep, reduce inflammation, lower skin irritation and soothe the stomach and reduce bloating.
With the first mouthful, my taste buds have already taken me back to the sweet and floral scent of that amazing lavender farm in the Okanagan and the warm sun of that glorious summer. Sigh!
