Peanut Butter Snowflake Cups

The upcoming holiday season is known for gift-giving, time spent with loved ones, and many times—unhealthy eating. With an abundance of holiday parties and get-togethers centered around eating, it can be an overwhelming task to continue promoting healthy eating for both yourself and your kids. Therefore, you may want to consider making some swaps that will still satisfy your family’s sweet tooth but offer more nutrients and fewer calories, less saturated and trans fats and added sugar.

If you are into baking sweet holiday treats, opt for healthier versions of your favorite recipes. For example, these chocolatey snowflakes with a delicious gooey peanut butter centre are not only lower in sugar and free of highly-processed ingredients, they also taste better than the originals, if I do say so myself!

You can make this recipe in a muffin tin with small cupcake liners to get a peanut butter cup look or you can do what my daughter and I did. We used a silicon snowflake mold cavity like this one to create these fun-shaped Peanut Butter Snowflake Cups.

This is an easy recipe with minimal ingredients you can make in a snap. For the best texture, I recommend storing in the fridge or freezer until ready to serve.

  • 1 cup coconut oil
  • 1 cup raw cacao powder
  • 2 tbsp raw honey
  • 2 tsp vanilla extract
  • pinch of sea salt
  • 12 cup natural peanut butter or other nut butter
