I chose to make a strawberry/mango combo above for Mother's Day, but you can use any fruits you like: blueberries, peaches, raspberries, cherries, blackberries, etc. If you are a chocolate lover, throw a few heaping teaspoons of raw cacao. To create swirls on the top layer of the strawberry mango cheesecake, I alternated pouring the fillings in blobs and used a chopstick to swirl the two different fillings around. Then I garnished the cake with a pretty flower for mom.
